Marshmallow made simple –
what could possibly be better to partner a yummy hot chocolate
So much easier to make than you think, and so much better and cheaper than store bought. Home-made marshmallow a delicious and indulgent treat.
ingredients
1 cup Chelsea Caster Sugar
1/2 cup water
1 1/2 tsp gelatine
3-4 drops food colouring (vibrant colours)
1 tsp lemon juice (or a
couple of drops of vinegar)
method
1.Bring caster sugar water to the boil until the sugar is dissolved
2. Add gelatine, bring back to the boil until bubbling strongly, take off the heat and strain into a bowl. Add 3-4 drops of food colouring and either the lemon juice or vinegar (you can’t taste these) and beat with a mixer until thick and fluffy (not to the same point as a meringue. No peaks)
3. Pour into a tray lined with non-stick paper.
4.Leave to set for at least 2 hours.
5.Tip out onto a board covered with icing sugar. Cut with a knife edge dipped in icing sugar.
